Her post got me to thinking, why don’t I write about our food?  I mean, I pretty much know our menu inside-out, upside-down, ingredient-by-ingredient.

Dungeness Crab Cakes with Fire Roasted Red Pepper Emulsion

At Ocean Crest Resort, we make our Dungeness Crab Cakes a little differently than most others… we put crab in them.  Just one look and you can tell that they aren’t full of breading or other fillers.  Now, of course, we do have some other ingredients in there for color, flavor, texture and to hold them together.

Our Dungeness Crab Cakes are assembled with Dungeness Crab, yellow onion, red and green bell peppers, eggs, mayonnaise, and a couple of secrets… you didn’t think I was going to give away the farm, did you?  We simply grill our Dungeness Crab Cakes on our flat top grill and top them with a Fire Roasted Red Pepper Emulsion which features roasted red bell peppers, black olives, garlic, parsley, olive oil, salt and pepper.
