Look at that thing, doesn’t it look good enough to eat?
OK, tonight I am going to write about the Fried Chevre Cheese Salad that we serve at our restaurant. This salad is great and easy to make. We start with Chevre cheese. “What is Chevre cheese?”you ask. Chevre cheese is a goat’s milk cheese, chevre is the French word for goat. Back to the salad, and stop interrupting me. There will be time for questions and comments, after you read the post, in the comments section. We use a disher to scoop a consistent portion of chevre and roll it on panko, Japanese bread crumbs. We put a little oil on our flat top grill, shape the cheese from ball to thick patty, and place it on the grill. At the same time we cut a couple triangles out of pita bread and place it on the grill next to the chevre.
While the cheese and bread are grilling, we turn our attention to the salad portion of this equation. All we do is toss some spring salad mix with our house made Parsley Vinaigrette and place it in a bowl. When the cheese is done cooking, we perch it on top of the salad and decorate with the pita points, some candied pecans, and julienned Granny Smith apple.

A wonderful salad! A great taste treat; tartness of the apples contrasting with the sweetness of the candied nuts and to top it off (literally), a generous portion of grilled Chevre cheese! Oh yummy! Will have this again for sure.
