OK, I have a confession to make. I’m not really fond of green beans. Tonight I was faced with a challenge, I was to prepare green beans for the vegetable of the day. I started thinking about what I was going to do with them. All the normal ideas came to mind, but that just wasn’t good enough. I needed to make something that was outrageous. So I came up with Blackberry Green Beans.
This is where I would normally tell you how simple the dish is, but Frenching a half case of green beans is anything but easy. The preparation is a piece of cake. After Frenching the green beans you simply sauté them in olive oil with onions, salt and pepper to taste and a couple pinches of sugar. Yes, sugar. Toss some blackberries into the pan, fresh or frozen, and deglaze with a 50/50 blend of red wine and Lea & Perrins Worcestershire Sauce. Done… That’s it, give it a try.
